Nashville Hot Chicken Sandwiches

These crispy, juicy Nashville hot chicken sandwiches are an explosion of textures and spice.

Ingredients

  • 2 pounds chicken tenderloins (about 20 pieces)
  • 1 cup dill pickle juice
  • 2 tablespoons Louisiana-style hot sauce, divided
  • 1-1/2 teaspoons salt
  • 2 teaspoons pepper
  • 3 cups all-purpose flour
  • 3 large eggs
  • 1-1/2 cups buttermilk
  • Oil for deep-fat frying
  • SPICY GLAZE:
  • 1 cup olive oil
  • 2 tablespoons cayenne pepper
  • 2 tablespoons packed brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • TO ASSEMBLE:
  • 10 brioche hamburger buns, split
  • Mayonnaise
  • Sliced sweet pickles

Directions

  1. In a shallow bowl, combine chicken, pickle juice, 1 tablespoon hot sauce, salt and pepper. Cover; refrigerate for 1 hour.
  2. Place flour in another shallow bowl. In a third shallow bowl, whisk together eggs, buttermilk and remaining 1 tablespoon hot sauce.
  3. Dip chicken in flour, then in buttermilk mixture, and then back in flour, patting to help adhere.
  4. In an electric skillet or Dutch oven, heat oil to 375°. Fry chicken, a few pieces at a time, for 5-6 minutes on each side or until internal temperature reaches 165 °F. Drain on paper towels.
  5. To make spicy sauce, combine oil and next 5 ingredients. Immediately pour over hot chicken. Serve on buns with mayonnaise and pickles.
