Roasted Cabbage Caesar Salad

If you're not on the cabbage train yet, this roasted cabbage Caesar salad is guaranteed to get you on board.
Ingredients
- 4 tablespoons olive oil, divided
- 1 medium head cabbage (about 2 pounds), cut into wedges
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon crushed red pepper flakes
- 1/2 cup panko bread crumbs
- 1/4 cup grated Parmesan cheese plus more for serving
- 2 tablespoons unsalted butter
- 2 garlic cloves, minced
- 1/3 cup creamy Caesar salad dressing
Directions
- Preheat the oven to 400°. Line a rimmed 15x10x1-in. baking sheet with parchment paper. Drizzle with 2 tablespoons olive oil. Set aside.
- Arrange cabbage wedges on the prepared baking sheet. Drizzle with the remaining 2 tablespoons olive oil; sprinkle with salt, pepper, garlic powder and crushed red pepper flakes.
- Roast until golden on the edges and fork-tender, 15-20 minutes.
- Meanwhile, heat a small skillet over medium heat. Add bread crumbs, 1/4 cup Parmesan, butter and garlic. Cook until lightly golden brown, 3-4 minutes, stirring frequently. Immediately transfer to a paper towel-lined plate.
- To serve, arrange roasted cabbage on a platter. Drizzle with Caesar dressing. Sprinkle with toasted bread crumbs; garnish with additional Parmesan cheese. Serve warm.
