Can you freeze Grapefruit Walnut Bread?
Securely wrap cooled loaves in foil, then freeze. To use, thaw at room temperature.
Ingredients
- 1 cup butter-flavored shortening
- 2 cups sugar
- 4 large eggs, room temperature
- 3 cups all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1 cup 2% milk
- 1 cup finely chopped walnuts
- 2 tablespoons grated grapefruit zest
- GLAZE:
- 1/2 cup sugar
- 1/2 cup grapefruit juice

1Preheat oven to 350°. Grease and flour two 9x5-in. loaf pans.

2In a large bowl, beat shortening and sugar until crumbly. Add eggs, 1 at a time, beating well after each addition. In another bowl, whisk flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition. Fold in walnuts and zest.

3Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 60-65 minutes. Meanwhile, whisk glaze ingredients. Remove pans from oven; immediately brush with glaze. Cool in pan 10 minutes before removing to a wire rack to cool completely.
