Jack-o-Lantern Rice Cake Treats

   In a small saucepan, add sweet potatoes and enough water to cover them. Bring to a boil, reduce heat to medium. Simmer until tender, 15-20 minutes. Drain; set aside.

   In the same pan, melt butter over low. Add sugar, cinnamon, allspice and pumpkin pie spice. Add apple slices, cover, cook until tender, 4-5 minutes. Add sweet potatoes and milk.

   Remove from heat. Using an immersion blender or high powered blender, puree until smooth. Add cherry juice; stir to combine. Refrigerate until cold, about 1 hour.

   Spread sweet potato mixture over rice cakes, decorate with milk chocolate kisses for eyes, and raisins for mouth so design resembles a jack-o-lantern.
