Ingredients

  • 1 cup water
  • 1/3 cup white wine or water
  • 2 salmon fillets (5 to 6 ounces each), skin removed
  • 1 tablespoon apricot preserves
  • 1 tablespoon pineapple preserves or 1/4 cup crushed pineapple, drained
  • 1 tablespoon Dijon mustard
  • 1 tablespoon hot honey
  • 1 tablespoon capers, drained

Directions

    In a large saucepan, combine water and wine. Bring to a boil. Adjust heat to maintain a gentle simmer. Add salmon. Cook, covered, until a thermometer reads 145° and fish is no longer opaque, 10-15 minutes.

    In a small microwave-safe bowl, combine remaining ingredients. Cook until heated through and combined, about 30 seconds.

    Remove salmon with a fish spatula or slotted spoon to plates. Spoon sauce over top.
