Ingredients
- 1 cup all-purpose flour
- 1 cup almond flour
- 1/4 teaspoon sea salt
- 1/3 cup sugar
- 4-1/2 teaspoons culinary grade matcha (green tea powder)
- 1 tablespoon packed brown sugar
- 1/2 cup butter, softened
- 1 large egg yolk, room temperature
- 1 teaspoon vanilla extract
- 1/4 cup cranberry jam
Directions

1Preheat oven to 350°. In a medium bowl, combine first 6 ingredients.

2In a large mixing bowl, combine the butter, egg yolk and vanilla extract. Whisk until the mixture has soft peaks. Gradually add dry ingredients into butter mixture until well combined.

3Scoop by 2 tablespoonfuls onto parchment-lined baking sheets, placing 1 inch apart. Press a deep indentation in center of each with the end of a wooden spoon handle. Fill each with 1 teaspoon of cranberry jam.

4Bake 15-20 minutes or until set. Remove from pans to wire racks to cool completely.
